Enter the dark chocolate soufflé—a classic French dessert that blends indulgence with a cozy charm.
ith its cake-like exterior and silky, pudding-like interior, this dessert is the perfect grand finale to any meal.
A Healthier Indulgence
What makes this soufflé even more special is its use of premium 72% dark chocolate, far surpassing the typical 60% found in many recipes. This richer chocolate not only intensifies the flavor but also offers a healthier alternative. Combined with a cane sugar blend, it delivers fewer calories and has a milder effect on blood sugar—so you can enjoy every bite with balance and ease.

Our Winter’s Day Dark Chocolate Soufflé
- 10 oz Dark Chocolate (72% Cacao): Baking chips or chunks.
- Butter: 6 tablespoons, plus extra for coating the dish.
- Truvia Cane Sugar Blend: 3 tablespoons, plus extra for dusting the ramekins.
- Eggs: 6, separated and at room temperature.
- Cream of Tartar: 1/2 teaspoon.
- Salt: 1/8 teaspoon.
- Vanilla Extract: 1/4 teaspoon.
- Preheat Oven:
Adjust the oven rack to the lower-middle position and preheat the oven to 400°F. - Prepare Ramekins:
Generously butter six 1 cup ramekins. Then, lightly sprinkle the bottoms and sides with the sugar blend. - Melt Chocolate and Butter:
In a medium microwave-safe bowl, combine the chocolate and butter. Microwave in 30 second intervals, stirring between each, until completely melted. Whisk in the egg yolks, salt and vanilla extract until well combined. - Beat Egg Whites:
In an electric mixer, beat the egg whites with cream of tartar on high speed until soft peaks form. With the mixer running, gradually add the sugar one tablespoon at a time, beating until the egg whites hold stiff, glossy peaks. - Combine Mixtures:
Whisk a quarter of the beaten egg whites into the chocolate mixture to lighten it. Then, gently fold in the remaining egg whites in two additions. Divide the batter evenly among the prepared ramekins, filling each nearly to the rim. Use a damp paper towel to wipe away any excess batter from the rims. - Bake and Serve:
Bake the soufflés for about 11–13 minutes, or until they are puffed, and the center moves only slightly when the dish is gently shaken. Serve immediately. - Make-Ahead Option:
To prepare in advance, freeze the filled ramekins until you’re ready to bake. When needed, preheat the oven to 400°F and bake the soufflés for 17–18 minutes.
